We recently took a wonder down to The Rock Garden, the infamous local steak house, which has such an impressive array of spirits. As any bartender knows, you can never take your eyes off the backbar when you’re out and The Rock Garden’s is a beautiful sight to behold.
The Rock Garden are another great supporter of Haut Maison, who have our entire range proudly on show and using them extensively in their impressive menu.
Helder, 26 from Portugal, resident mixologist at The Rock Garden has been in Guernsey for five years and bartending for four. He’s clearly a passionate bartender with a first class palate and really knew his stuff, proudly talking through his ingenious creative process.
Helder treated us to three cocktails made with Haut Maison ingredients, the Victor Hugo Espresso Martini, Heldinho and a Salted Negroni.
Helder’s favourite cocktail is the Black Russian, a true coffee fan and a big advocate of our coffee liqueur. He started his career as a waiter and was drawn to cocktails when he saw the excitement on customer’s faces as he brought cocktails over and shortly after started his career in bartending at the OGH before becoming Bar Supervisor at The Rock Garden.
The Rock Garden’s most popular cocktail is The Black Martini, a fantastic vanilla and raspberry cocktail made with our rich Raspberry Liqueur.
Victor Hugo Espresso Martini
- 25ml Haut Maison Coffee Liqueur
- 15ml Vanilla Syrup
- 10ml Amaretto
- 15ml Mozart Dark Chocolate Liqueur
- 5ml Almond Syrup (Orgeat)
- 5ml Gingerbread Syrup (Pains D’Epices)
- 25ml Half & Half (Milk & Cream)
- 1 shot of Fresh Espresso
An insanely moreish riff on the Espresso Martini, I was so disappointed to be driving! Finished off with popping chocolate & grated nutmeg.
- 25ml Haut Maison Damson Gin
- 25ml Antica Vermouth
- 25ml Campari
- Pinch of Himalayan Salt
We have sampled our fair share of Negroni twists with our Damson Gin (I think people know I like Negronis…), and whilst I try to avoid favouritism, I just can’t help myself here, this is truly magnificent.

- 25ml Strawberry Liqueur

An impressive list of ingredients used in this drink, to the untrained eye it might seem like overkill, but it’s a perfectly balanced tour de force of fruit flavours using three locally produced ingredients.
